In this month of November, the Christmas spirit is felt in the streets of Paris. Between the illuminations on every corner, the gourmet advent calendars and the Yule log cakes being prepared and posted on social networks, the chefs are making our mouths water. Discover the must-have trends for the end of the year:

Pierre Hermé is leading the festive season!

His unique calendars have been released to the delight of our eyes and taste buds. The two circular versions of the calendar, “Cloud Flower” and “Ice Rose”, will take you on a 24-day journey with different chocolates, mendiants and other sweets. The limited-edition in which a pink or blue glass ball is placed in the center of the calendar was a victim of its own success and is unfortunately no longer available.

Coffee is at the heart of our days!

There’s no need to wait for the cold of winter to set in before drinking a good coffee or a good hot chocolate! This year, coffee is in the spotlight and Café Nuances has clearly understood this! New place dedicated to speciality coffees, this is the spot to stop at any time of the day. And don’t worry, there’s no risk of missing this establishment thanks to its original frontage with the effigy of the old dairy shop which was located there. That’s all it took for The Social Food team to set up Téa Gelato as an ephemeral pop-up. Two days only to taste this wonderful collaboration between coffee and exceptional ice cream: the Affogato!

Caffeine addicts gathered at the Paris Café Festival to taste exceptional coffees from all over the world. Some very talented baristas met and competed in the SCA Latte ART Championship. It was an opportunity to discover producers, participate in conferences and meet the best brewers over a delicious hot drink.

CBD in all its forms!

Speaking of trends of the month, here’s another one that is evolving and that everyone is talking about! Cannabidiol or CBD is an active ingredient derived from cannabis, which is increasingly popular but still much criticised. It has relaxing and non-psychotropic properties.

Aromatically very powerful, this plant is invading our plates and its particular taste pleases more and more customers if it is dosed correctly. In flowers as well as in oil, it can be found today in many establishments. In partnership with Netflix, Will’s Deli decided to produce 1000 CBD sandwiches. After queuing for more than 250 meters, customers were given the choice between Pastraweed and Falafel SD sandwiches. It’s a great way to promote the Family Buisness series and a guaranteed taste of weed!

But Will’s is not the only restaurant to exploit this new product. The Village Terrazza in the 14th arrondissement offers its customers a small bag of extra CBD flowers to sprinkle on their pizzas or pasta instead of oregano.

The trend goes even further as great cuisine and pastry chefs are also starting to use CBD in their creations. This is for example the case of Chef Philippe Conticini who launched Cirrus in partnership with FrenchFarm.ac, a CBD producer. A cloud mixing citrus, pepper and white chocolate flavours with the very herbaceous taste of CBD dosed to the gram to limit the bitterness.

And you, what are the culinary trends that have marked your year?
